V's Chicken Salad Sandwich

One of the best things in life is to sit down with a perfect sandwich and a cold adult beverage in front of the tv while a sporting event is going on during the weekend . And believe me , I've had many opportunities to do this so I consider myself a connoisseur of sandwiches at this point. Earlier I posted the recipe for one of my favorites which is "The French Dip" . However I would have to say that right up on the top of the list is the chicken salad sandwich as I enjoy the texture of the sandwich as much as I enjoy the taste itself. The best thing about the chicken salad sandwich is that you don't have to have it between 2 pieces of bread but just take a scoop or 2 and toss it on a few leaves of lettuce or a use a lettuce wrap as a low carb option. This recipe is easy to make and serves 6-8.


Ingredients


2 cans chicken breast meat,drained

1/2 cup of celery diced

5 dill pickle spears , chopped

1/3 cup of diced carrot

1/3 cup Red onion diced

1/2 cup mayonnaise

2 tablespoons dijon mustard

1 Tsp celery salt

1 Tsp garlic powder

pinch of paprika

Freshly ground pepper

salt to taste

Lettuce and tomato for topping.

Toasted bread for sandwiches, I prefer sourdough but wheat also works.


Directions


1: Combine the chicken, celery, carrot,red onion, mayo, pickles, mustard, celery salt, garlic powder, paprika and 1 teaspoon of pepper in a bowl. Mix

2: Add salt and pepper to taste if necessary. Serve with lettuce and tomato on toasted bread if you are making a sandwich. Otherwise serve wrapped in lettuce for that low carb alternative and enjoy.
