Simple Chicken Pilaf
Chicken pilaf is a dish that is one of the first dishes that I remember making when I was young and living on my own because it's one that can utilize whatever is available in the panty beside the main ingredients of rice and chicken. Of course you can utilize other meats to go with pilaf such as tuna or lamb but I prefer the chicken version and its still a favorite with my family.
This recipe serves 3-4.
1 whole Rotisserie chicken- chopped into bite sized pieces
2 Tbsp butter
1 box of rice pilaf from Rice-a- Roni
1 cup Chicken broth
1 cup of water
1/2 cup of sour cream
1/8th tsp black pepper
1/8 tsp Coriander
1: Melt 2 tbsp of butter in a large skillet. Add the rice piaf mix and cook over medium heat until lightly toasted. Add the chicken broth and water and bring to a boil then reduce to low and cover..
2: Cook for 20 min or until all the water is absorbed. Remove the lid and stir in the sour cream, black pepper, chicken meat and coriander until thoroughly blended. Enjoy.
