Lemon Garlic Swiss Chard

Chard is one of those vegetables that we used to have on special occasions. I think it's great on any occasion and is a good alternative to spinach as a side or main dish. Recently we tried a different recipe for chard and were very pleased with the results. We think you will enjoy this as well as its very simple to make. This recipe serves 3-4.

1 large bunch of Swiss chard ( about 6 leaves or 10 cups), cleaned and trimmed of stems & ribs

1 Tbsp Olive Oil

2 Tbsp minced garlic

1/4 cup White onion

2 Tbsp water

1 Tsp lemon juice

1 Tsp lemon zest

1/4 tsp black pepper

1/4 parmesan cheese (for topping if desired)

1: On a add olive oil to a large skillet and hear to medium high heat. Add garlic and onion. Cook for 2 minutes.

2: Add the chard and water to the skillet and cook for 3 to 8 minutes or until the chard is tender. Stir in the lemon juice, the lemon zest and pepper. Add salt to taste and the cheese if desired. Serve.
