Chicken Enchilada Soup

With a new job, tax season and getting a car out of the body shop all going on at the same time, it can be a little tough finding the time to sit down and put something together for the blog. That being said, I apologize for the lag in getting a new recipe posted and will do a better job getting this out on a more regular basis. With that out of the way, the recent wet weather gave us a chance to bust out one of my favorites that my girlfriend likes to make on a cold wet evening. We all love mexican food and soup so when you combine the two it's a win-win. It's a great meal in itself. And with all the flavors , it is literally a fiesta in your mouth.....see what I did there. This recipe serves 3-4.


2 Tbsp Olive Oil

1 large onion, diced ( I prefer red but you can also use yellow)

1 green bell pepper seeded and chopped

1 -10 oz can of red enchilada sauce

8 oz cream cheese

1- 14 oz can of diced tomatoes

1- 15 oz can of black beans, drained and rinsed

1 - 15 oz can of corn kernels drained

2 cups of cooked chicken breasts. chopped

1 cup of chicken broth

2 chopped green onions

1 cup of mozzarella cheese shredded

Sour cream ( if desired)


1: heat the olive oil in a soup pot over medium heat. Add the large chopped onion and bell pepper. Cook for about until the onion is soft and translucent. Roughly 5 min

2: Add the enchilada sauce and cream cheese. Break down the cream cheese with a spoon until the cheese is completely melted. Next add the diced tomatoes, black beans, corn and stir.

3: Add the chicken breast and chicken broth. Cook for about 10 to 15 minutes while stirring occasionally so that the cheese does not curdle. If you find the soup is too thick add a little more chicken broth.

4: After the soup gets hot, remove from the heat and add the green onions and mozzarella cheese before serving.

I have not tried this recipe with green instead of red enchilada sauce but if you do please let me know how it turns out. Also you can add a dollup of sour cream to top off the soup along with the green onions and the cheese if you wish.
