Baked cod fillet with lemon

A simple recipe for baked cod that can be used for most types of white fish such as tilapia, halibut, and flounder. My taste for seafood runs more toward shellfish but this dish was very tasty and goes well with either rice or potatoes and a wide variety of vegetable side dishes. This recipe serves 3-4.


4 cod fillets

3 tbsp melted butter

3 tbsp lemon juice

1/3 cup flour

1/2 tsp salt

1/4 tsp paprika

1/8 tsp lemon pepper

1 tbsp parsley

1 tbsp grated lemon zest


1. Preheat over to 400 degrees. In one bowl melt the butter in a microwave and then add the lemon juice. In a separate bowl add the flour and the rest of the seasonings. Mix with a fork to combine.

2. Dredge the fillets in the lemon juice mixture and then dip into the flour mixture. Next take a 13 x 9 baking dish and spray with non-stick spray. Put fillets in the dish and drizzle them with extra lemon- butter mixture that remains.

3. Bake 12 minutes or until the cod flakes easily with a fork. Sprinkle with some parsley and lemon zest and serve.
